Toast pumpkin seeds, sesame, spices and tortillas separately until fragrant without burning.
Char tomatoes, tomatillos, onion, garlic and seeded chillies on a dry pan.
Blend all toasted ingredients with stock into a smooth, thick sauce.
Brown chicken, pour over the sauce and enough stock to loosen, then simmer covered.
Cook until chicken is tender and safe, stirring often as the seed sauce thickens.
Serve with rice, warm corn tortillas and chopped coriander.
