Cepelinai
Cepelinai are Lithuania's zeppelin-shaped potato dumplings, usually filled with seasoned pork and served with bacon-onion sauce and sour cream. A mix of raw and cooked potato gives the casing structure.

Grate raw potatoes finely, squeeze very dry in cloth and reserve the settled starch from the liquid.
Mix raw potato, mashed potato, reserved starch and salt into a mouldable dough.
Season pork with onion, marjoram, salt and pepper and form eight small oval portions.
Wrap each filling completely in potato dough and lower into gently simmering salted water.
Cook for 25–30 minutes, then serve with fried bacon, onion and sour cream.
Serve hot with sour cream, crisp bacon and onions.
