Yakgwa
Yakgwa are Korean wheat cookies flavoured with sesame oil, ginger and honey, slowly fried and soaked in aromatic syrup. Their layered, tender texture comes from handling the dough minimally.

Make a syrup from sugar, water, honey, ginger and cinnamon; cool completely.
Rub sesame oil into flour, then add honey and rice wine and fold into a dough without kneading.
Roll, fold and roll once more, then cut or stamp small cookies and pierce the centres.
Fry first at 110–120°C until expanded, then raise to 150°C until deep golden.
Transfer warm cookies directly into cool syrup, soak several hours and drain.
Drain well and serve with tea, topped with pine nuts or sesame seeds.
