Qurutob is a communal Tajik dish of torn fatir bread softened with tangy qurut yogurt sauce and topped with onions, tomatoes, cucumber and herbs.

Dissolve grated qurut in warm water until smooth; if using yogurt, thin and salt it to a pourable consistency.
Cook one sliced onion slowly in butter until golden.
Tear bread into a wide serving dish and pour over enough warm qurut sauce to soften it.
Top with golden onion, raw onion, tomato, cucumber and herbs.
Season with pepper and serve immediately.
Serve on a wide platter and eat communally while the bread is soft but not mushy.
