Charquicán is a homestyle Chilean stew of beef, pumpkin, potato and vegetables cooked to a rustic mash. Its name reflects older versions made with dried meat, or charqui.

Brown the beef, add onion, carrot and spices and cook until aromatic.
Add cubed potato and pumpkin with enough stock or water to come halfway up the vegetables.
Cover and simmer until soft, then mash some of the potato and pumpkin directly in the pot.
Add corn and green beans and cook uncovered until tender and thick.
Taste for seasoning and serve with a freshly fried egg if desired.
Top each bowl with a fried egg and serve with pebre.
