Ochazuke is a light Japanese bowl made by pouring hot green tea or dashi over cooked rice. Small savoury toppings turn leftover rice into a soothing quick meal.
4 stappen
Warm the rice thoroughly and divide it between two deep bowls.
Season the salmon lightly and place it over the rice with nori and spring onion.
Pour very hot tea or dashi around the rice until partly submerged.
Finish with rice crackers and sesame and eat immediately before the crackers soften.
Offer extra nori, wasabi and rice crackers so each bowl can be adjusted at the table.
