Poach fish in lightly salted water until just cooked; flake carefully and reserve the broth.
Pound lemongrass, turmeric, lime leaf, garlic, shallot and galangal into a fine paste.
Cook the paste until fragrant, add fish, coconut milk and enough broth for a pourable gravy.
Simmer gently for 20 minutes and adjust salt and sweetness.
Divide noodles among bowls, ladle over hot gravy and add fresh vegetables and herbs.
Arrange herbs, cucumber, banana blossom and lime at the table for diners to add freely.
