Fanesca
Fanesca is Ecuador's Holy Week soup, traditionally combining salt cod, squash, milk and a symbolic variety of grains and pulses. Families prepare it communally and finish each bowl with colourful garnishes.

Soak salt cod overnight, changing the water several times; poach gently in milk and flake, checking for bones.
Cook onion, garlic, achiote and cumin, then stir in squash purée and ground peanuts.
Add the poaching milk and all cooked grains and pulses; simmer slowly for 25 minutes.
Fold in most of the cod, cheese and a little cream without breaking the beans.
Adjust thickness and salt carefully, then add the remaining cod and garnishes.
Garnish with hard-boiled egg, fried plantain, cheese, parsley and small empanadas.
