Bozbash is a traditional soup of Azerbaijan's national cuisine. It is prepared with mutton and enriched with various vegetables.

Wash the meat, pour water over it and boil until cooked (about 2 hours). When the meat boils, the foam forming on top must be skimmed off with a spoon.
Wash the chickpeas, pour water over them, and boil until cooked.
Once the meat is cooked, add the cooked chickpeas, halved potatoes, 1 whole onion (uncut), butter, salt, turmeric, and sour cherry plum.
Cook the dish over low heat until the potatoes soften.
When the dish is ready, remove the onion, and sprinkle dried mint on top when serving.
Served hot, sprinkled with dried mint. Can be eaten with bread or pickles.
