Gurza is one of the traditional dough dishes of the national cuisine of Azerbaijan. It is a dish especially loved in the winter months.

Add egg, salt, and water to the sifted flour and knead a normal dough.
Cook and prepare the minced meat as usual.
Make two balls from the dough. Sprinkle a little flour and roll out with a rolling pin. The dough should not be too thick or too thin.
Cut circles 4 cm in diameter. Put the filling and fold.
Boil the water. Add 2 tbsp of salt to the water. When it starts to boil, pour the gurzas. When they boil and come to the surface, boil for about 5 minutes and strain. Check the salt in the water. Add more if necessary.
Put in bowls, pour melted butter on top, and sprinkle sumac.
Served hot, sprinkled with butter and sumac, and with yogurt on the side.
