Iravan Gata is one of the Novruz sweets and is considered a traditional pastry of Western Azerbaijani cuisine.

Crumble the flour and butter together.
Add sour cream and mix.
Mix vinegar and baking soda, then pour into the dough.
Knead by hand to form a soft dough.
Set the dough aside and prepare the filling: crumble the flour and butter, add granulated sugar and vanilla, and mix.
Divide the dough into 4 equal portions and shape them into balls.
Roll out one of the dough balls into an oval shape with a thickness of 2-3 mm.
Spread the filling over it.
Roll the dough using a rolling pin or by hand, and seal the ends.
Cut into diamond shapes using a crinkle knife.
Prepare all dough balls in this manner.
Line a baking sheet with parchment paper and arrange them. Glaze with egg wash.
Bake in a preheated oven at 200-220°C until the tops are golden brown (for 20-25 minutes).
Serve with hot or cold tea.
