Herb qutab is one of the national dishes of Azerbaijan. It is usually prepared with fresh herbs in the spring months.

Sift the flour into a bowl, sprinkle with salt, crack the egg into the center, add water and mix with a spoon.
Then knead a normal dough with your hands.
Divide the dough into small pieces and form into balls. Cover with cellophane so it doesn't dry out.
Prepare the filling: Clean and wash the herbs, then chop finely. Sprinkle salt on the chopped herbs and mix well.
Take one dough ball, sprinkle with flour and roll out a thin flatbread.
Put filling on half of the flatbread and spread it.
Fold the flatbread in half and seal the edges.
Place on a heated saj over gas or wood fire and fry on both sides.
As each qutab is cooked and stacked, spread butter between them.
Served hot, sprinkled with sumac and with yogurt on the side.
