Fry bacon until crisp, then brown mushrooms in the rendered fat and keep warm.
Bring sour cream, water and salt to a gentle simmer in a heavy pan.
Rain in cornmeal while whisking constantly to prevent lumps.
Cook over low heat, stirring, until thick and glossy and the grain is tender.
Beat in butter and top with cheese, bacon and mushrooms.
Serve immediately with bryndza, fried mushrooms and bacon cracklings.
